Menu:

Lamb or beef kofta with harissa yoghurt
Fattoush salad with pickled red onions
Tabouleh with roasted peppers and parsley Wraps or flat breads (optional)

(Serves 4)

Ingredients:
750gr lamb mince (or beef)
1/2 bunch mint, chopped
100gr bread crumbs (fresh or dried)
1 tsp ground cumin
1 egg
Salt & pepper
2 tsp rose harissa

Harissa Yogurt:
1 x 170gr Rose harissa paste Belazu (available from Tesco’s or Waitrose) 250gr Greek yoghurt 30ml olive oil Salt & pepper Oil for frying
Salad:
1 x cucumber
2 baby Gem lettuce, washed and quartered long ways 250gr cherry tomatoes, halved
1 x lemon, halved
2 x pita bread, cut in half long ways to make flat halves 1tsp dried oregano or thyme or marjoram or Italian mixed dried herbs
2 medium red onions, thinly sliced
1/2 bunch mint, picked off the stem
100ml white or red wine vinegar
50gr sugar (any)
1 x pomegranate, halved
50ml olive oil
Salt&pepper

Tabouleh:
100gr bulgar wheat
1 bunch parsley, finely chopped
1 lemon, juiced
1 x 285gr jar roasted peppers, drained and chopped 30ml olive oil 150ml boiling water 1tbsp honey Salt & pepper Pinch of crushed chilli (optional)

Equipment:
1 x large tea cup
1 x small pot
Vegetable Peeler
Cling film
Sieve or colander
Large frying pan
Hand blender if available
Roasting tray
Large mixing bowl
Regular mixing bowls x 3
Spatula
Serving platters/bowls
